Laila’s Blueberry Bundt Cake

I learned this recipe from my mother-in-law. This is a moist and delicious cake. It is an easy cake to throw together if you have last minute guests coming over. Or as a nice treat for you and your family.

You do not need to be a baker to make this recipe. It is quite simple to put together and your family and friends would love to sink their teeth into this moist and yummy cake. Let’s get started.

First thing you want to do is take your butter out to get it to room temperature. I slice my stick into pieces to make it get to room temperature quicker.

While you are waiting for your butter to get soft you can start by whisking together the flour, baking powder, and salt. Also, mix the milk and vanilla together.

Once your butter has come to room temperature( do not let it get too warm), cream the butter and the sugar in a stand mixer with the paddle attachment on medium speed until light and creamy, about 5 minutes.

After it is creamy add the eggs one at a time. Mix well after adding each egg.

After adding the eggs you want to begin to add the flour and milk alternating between the two. Add a third of the flour mixture, mix well, then add half of the milk mixture. Be sure to mix after each addition. Continue with another third of the flour. Then the rest of the milk mixture. And last the remaining third of the flour mixture.

After all dry and wet ingredients are incorporated, mix the blueberries with a bit of flour(about 2 Tbsp). This helps a bit from all the blueberries sinking to the bottom of the pan.

Next, fold in the blueberries by hand. Mix just until the blueberries are dispersed well. Be gentle as to not pop the blueberries:)

Grease your bundt pan. I use the baking spray with flour. Then gently fold into the pan.

Bake at 350 degrees for 45-55 minutes.

Allow the cake to cool completely before sprinkling with powdered sugar or regular sugar.

Serve and enjoy.
